Assam White Tea is grown exclusively in the state of Assam, located in Northeast India. It also lives up to its honourable birthplace, and likewise stands alone as a wonderfully unique beverage. Like all White Teas, however, this brew is created through minimal processing thus limiting the oxidation period and only immature leaves are plucked from the tea bush are used.

Assam is not just home to this particular tea, but also Indian tea as a whole. Tea was first discovered in India during the 19th Century when the country was still under British rule. In fact, it was a Scottish adventurer and merchant by the name of Robert Bruce who was first credited with the find. Before then, however, tribes located near Rangpur (present-day Sivasagar) had consumed tea leaves without knowing what they really were.
Bruce made the discovery during a diplomatic journey to visit one of these tribes. He was presented with the tea leaves as a gift and then sent specimens of the plant to his brother, C.A. Bruce, for further examination. Eventually, the specimens were studied at the Calcutta Botanical Gardens where it was finally uncovered that the plant was, in fact, related to the Chinese Camellia Sinensis var Sinensis plant. The Indian variant later became known as Camellia Sinensis var Assamica after the state in which it was found.
Today, the state of Assam remains one of the richest biodiversity zones in the world. It is surrounded by the northern Himalayas, the Brahmaputra plains, and the Deccan plateau, and is frequently subjected to heavy rainfall (2500-3000mm annually), as well as high humidity throughout the year. Assam consists of 312,210 hectares of tea-growing area, making it one of the largest in the world. It exports around 570 million kilograms a year, which accounts for roughly 13% of the global tea trade. While our Assam White Tea might be considered a small fish in a big pond, it also belongs to a school that is known and loved near enough everywhere.

Brewing Instructions: Brew using freshly boiled water left to cool to temperatures between 80 and 90 degrees. Following this, infuse for 2 to 3 minutes.
